Creamy Corn Chowder

A heartwarming and creamy corn chowder perfect for chilly nights, filled with sweet corn, potatoes, and smoky bacon.

  • 4 cups fresh sweet corn (or frozen)
  • 23 medium Yukon Gold potatoes, diced
  • 46 strips bacon, chopped (or turkey bacon for a lighter option)
  • 1 cup heavy cream (or half-and-half/whole milk)
  • 2 tablespoons butter (or olive oil)
  • 1 medium onion, diced
  • 23 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • Salt and pepper to taste
  • Chives or green onions for garnish

Instructions

  1. Sauté the bacon in a large pot over medium heat until crisp, about 5-7 minutes. Remove bacon and drain on paper towels.
  2. Cook the onions in the same pot for about 5 minutes until translucent. Add garlic and cook for another minute.
  3. Add the diced potatoes and corn, stirring to combine.
  4. Pour in the broth, bring to a boil, and then reduce to a simmer for 15-20 minutes until potatoes are fork-tender.
  5. Blend a portion of the chowder for creaminess, using an immersion blender or a regular blender.
  6. Add the heavy cream and let simmer gently.
  7. Season with salt and pepper, stir in crispy bacon, reserving some for topping.
  8. Serve in bowls, garnished with chives or green onions and reserved bacon bits.

Notes

This chowder can be made ahead of time and tastes even better the next day. Serve with crusty bread or a light salad for a complete meal.
