Coffee Rolls

Delightful coffee rolls infused with rich coffee flavor and a swirled cinnamon filling, perfect for a sweet morning treat.

  • ¾ cup warm water
  • 3½ cups all-purpose flour
  • ⅓ cup granulated sugar
  • 2 teaspoons instant yeast
  • ¾ teaspoon fine sea salt
  • ½ cup whole milk (slightly warmed)
  • 1 teaspoon instant coffee granules
  • 1 large egg (room temperature)
  • ½ teaspoon vanilla extract
  • 4 tablespoons unsalted butter (room temperature)
  • 5 tablespoons unsalted butter (room temperature for filling)
  • ⅔ cup dark brown sugar
  • 2 teaspoons ground cinnamon
  • 1½ teaspoons instant coffee granules (for filling)
  • 2 oz cream cheese (softened)
  • 4 tablespoons unsalted butter (softened, for glaze)
  • 1 cup powdered sugar
  • 4 tablespoons heavy cream
  • ¾ teaspoon instant coffee granules (for glaze)

Instructions

  1. Create the Tangzhong: In a small pot, combine ¼ cup all-purpose flour and ¾ cup warm water. Whisk together and cook over medium heat until thickened, about 3-5 minutes. Remove from heat and let cool.
  2. Make the Dough: In a mixing bowl, combine 3½ cups all-purpose flour, ⅓ cup granulated sugar, 2 teaspoons instant yeast, ¾ teaspoon fine sea salt, ½ cup slightly warmed milk, and 1 large egg. Add in cooled tangzhong and mix until combined. Gradually incorporate 4 tablespoons butter.
  3. Knead the Dough: Knead for about 10 minutes on a floured surface until smooth and elastic. Place in a greased bowl, cover with a damp cloth, and let it rise in a warm spot for about 1 hour.
  4. Prepare the Filling: Mix 5 tablespoons softened butter, ⅔ cup dark brown sugar, 2 teaspoons ground cinnamon, and 1½ teaspoons instant coffee granules until blended.
  5. Shape the Dough: Punch down the risen dough, roll it out into a rectangle (15×10 inches), and spread the filling mixture evenly over it.
  6. Roll it Up: Starting from the longer end, roll the dough into a tight log and slice into 12 even pieces. Place them cut side up in a greased baking dish.
  7. Rise Again: Cover the rolls with a cloth and let them rise for 30-45 minutes until puffy.
  8. Bake: Preheat the oven to 350°F (175°C) and bake the rolls for 20-25 minutes until golden brown.
  9. Make the Glaze: Mix 2 oz softened cream cheese, 4 tablespoons softened butter, 1 cup powdered sugar, 4 tablespoons heavy cream, and ¾ teaspoon instant coffee granules until smooth. Drizzle over warm rolls.

Notes

Serve warm with coffee or tea, and dust with powdered sugar for an extra treat.
