Coconut Vanilla Protein Bars

Homemade protein bars that are flavorful, nutritious, and perfect for a snack or workout fuel.

Ingredients

  • 1 cup Vanilla Protein Powder
  • 1/2 cup Peanut Butter or Almond Butter
  • 1/4 cup Honey or Maple Syrup
  • 1/4 cup Melted Coconut Oil
  • 1 teaspoon Vanilla Extract
  • 1 cup Unsweetened Shredded Coconut
  • Pinch of Sea Salt
  • Optional: 1 to 2 tablespoons Coconut Flour

Instructions

  1. Prep Your Workspace: Grease an 8×8 inch baking pan with coconut oil or line it with parchment paper.
  2. Combine Dry Ingredients: In a large mixing bowl, mix vanilla protein powder, shredded coconut, and sea salt.
  3. Melt Your Nut Butter and Coconut Oil: Gently melt the nut butter with the coconut oil until smooth.
  4. Mix in the Wet Ingredients: Add honey (or maple syrup) and vanilla extract, mixing until silky smooth.
  5. Combine Everything: Pour the wet mixture into the dry ingredients and fold until no dry powder remains.
  6. Taste and Adjust: Taste and add more sweetener or coconut flour if needed.
  7. Press Into Your Pan: Transfer the mixture to the baking pan, packing it tightly.
  8. Chill and Set: Refrigerate for at least an hour to firm up the bars.
  9. Cut and Serve: Remove from the pan and cut into bars of preferred size.

Notes

For serving, try adding a smear of nut butter on top or drizzling with melted chocolate.
