Classic Macaroni Salad

A creamy and crunchy macaroni salad that’s perfect for picnics and family gatherings, blending delightful textures and flavors.

  • 8 ounces elbow macaroni
  • 3 celery stalks (sliced thin)
  • 1/2 red onion (diced)
  • 1 bell pepper (diced small)
  • 1 1/2 cups mayonnaise
  • 1/4 cup pickle juice (or white vinegar)
  • 1 tsp celery seed
  • 1 tbsp sugar
  • 1 tsp salt
  • 1 tsp pepper
  • 2 tsp mustard powder

Instructions

  1. Cook the Pasta: Start by bringing a large pot of salted water to a boil. Add the elbow macaroni and cook according to package instructions, usually around 8-10 minutes until al dente.
  2. Prep the Veggies: While your pasta is cooking, chop up your celery, red onion, and bell pepper.
  3. Drain and Rinse the Pasta: Once the macaroni is cooked, drain it in a colander and rinse thoroughly under cold water.
  4. Mix It All Together: In a large mixing bowl, combine the cooled macaroni, diced celery, onion, and bell pepper. Add the mayonnaise, pickle juice, celery seed, sugar, salt, pepper, and mustard powder.
  5. Taste and Adjust: Take a taste and adjust seasonings as needed.
  6. Chill: Cover the salad and refrigerate for at least 30 minutes.
  7. Serve It Up: Give the salad a good stir and transfer it to a serving bowl.
