Cinnamon Streusel Pumpkin Coffee Cake

A luscious coffee cake that perfectly marries the comforting flavors of pumpkin and cinnamon, topped with a crunchy, sweet streusel.

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp pumpkin spice
  • 1 cup pumpkin puree
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup streusel topping
  • 1/2 cup icing (powdered sugar mixed with milk)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare a 9×13 inch baking pan by greasing and flouring it.
  3. In a large mixing bowl, whisk together flour, sugar, baking powder, baking soda, salt, cinnamon, and pumpkin spice.
  4. In another bowl, whisk together pumpkin puree, vegetable oil, eggs, and vanilla extract.
  5. Combine wet and dry ingredients until just combined.
  6. Make the streusel topping in a small bowl by mixing flour, sugar, butter, and spices until it resembles coarse crumbs.
  7. Layer half of the cake batter into the prepared pan.
  8. Add half of your streusel topping over the batter, pour the remaining batter on top, and finish with the rest of the streusel topping.
  9. Bake for about 30-35 minutes until a toothpick inserted in the center comes out clean.
  10. Cool for about 10-15 minutes before transferring to a wire rack and drizzle icing over the cake.

Notes

Serve warm with whipped cream or a scoop of vanilla ice cream. Can add nuts or chocolate chips for variation.
