  • 1/2 cup light brown sugar, packed

  • 1 large apple, peeled, cored, and chopped
  • 2 tablespoons brown sugar
  • 1/4 teaspoon ground cinnamon
  • 3/4 cups confectioners’ sugar
  • 1/4 teaspoon ground cinnamon
  • 2 tablespoons water

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a 9×5 inch loaf pan by greasing it or lining it with parchment paper.
  2. Mix the dry ingredients: In a medium bowl, whisk together the all-purpose flour, baking powder, salt, and ground cinnamon.
  3. Cream the butter and sugars: In a large mixing bowl, beat together the softened butter, granulated sugar, and light brown sugar until light and fluffy.
  4. Add the eggs: Beat in the eggs one at a time and stir in the vanilla extract.
  5. Combine the wet and dry ingredients: Gradually add the flour mixture into the butter-sugar mixture, alternating with the milk.
  6. Fold in the apples: Gently fold the chopped apples into the batter.
  7. Transfer the batter into the prepared loaf pan and sprinkle with reserved brown sugar and ground cinnamon.
  8. Bake for 50-60 minutes or until a toothpick inserted into the middle comes out clean.
  9. Cool the bread in the pan for about 10 minutes before transferring to a wire rack.
  10. Glaze with confectioners’ sugar, cinnamon, and water mixture when cooled completely.
