Chocolate Covered Cherry Rice Krispies Treats

  • 3 tablespoons butter
  • 1 package (10 oz) mini marshmallows
  • 6 cups Rice Krispies cereal
  • 1 cup cherry-flavored candies or maraschino cherries
  • 1 cup chocolate chips
  • 1 tablespoon cherry extract
  • Chocolate drizzle (optional)

Instructions

  1. Prepare Your Pan: Grease a 9×13-inch baking dish.
  2. Melt the Butter: Melt the butter over medium-low heat until completely melted.
  3. Add in the Marshmallows: Stir mini marshmallows into the melted butter until fully melted.
  4. Mix in the Cherry Extract: Remove from heat and stir in cherry extract.
  5. Combine with Rice Krispies: Gently fold in Rice Krispies cereal until coated.
  6. Stir in the Cherries: Fold in cherry-flavored candies or maraschino cherries gently.
  7. Pour the Mixture into the Pan: Transfer mixture to the prepared baking dish and compact it.
  8. Let them Set: Allow to cool at room temperature for about 30 minutes.
  9. Melt the Chocolate for Drizzle: Melt chocolate chips in 30-second increments in a microwave.
  10. Drizzle Away!: Drizzle melted chocolate over the set treats.
  11. Slice and Serve: Cut into squares or rectangles and enjoy!

Notes

For a vegan option, consider using vegan marshmallows and chocolate chips along with coconut oil.
