Chocolate Babka

Delightful chocolate babka with tender, buttery dough swirled with a luscious chocolate filling.

Ingredients

  • 4 cups bread flour
  • 2 tablespoons granulated sugar
  • 1 teaspoon salt
  • 2¼ teaspoons instant yeast
  • 1 cup warm milk (110°F)
  • 3 large eggs
  • ½ cup melted butter
  • 6 ounces semisweet chocolate, finely chopped
  • ¼ cup cocoa powder
  • ½ cup sugar (for filling)
  • ½ cup sugar (for glaze)
  • ½ cup water (for glaze)

Instructions

  1. Activate the yeast: combine warm milk, 2 tablespoons sugar, and instant yeast. Let sit until frothy.
  2. Mix the dry ingredients: in a bowl, combine bread flour, salt, and remaining sugar.
  3. Add the wet ingredients to the dry mixture and combine until a dough forms.
  4. Knead the dough on a floured surface for 8-10 minutes until smooth and elastic.
  5. First rise: place dough in a greased bowl and let it rise for 1-2 hours until doubled.
  6. Prepare the filling by mixing chopped chocolate, cocoa powder, and sugar together.
  7. Roll the dough out into a rectangle and spread melted butter on top.
  8. Add the filling evenly over the dough, leaving a border.
  9. Shape the babka by rolling up tightly and slicing it in half.
  10. Twist the halves together and place in a greased loaf pan.
  11. Second rise: let it rise again for 30 minutes.
  12. Bake in a preheated oven at 350°F for 30-35 minutes until golden brown.
  13. Glaze with sugar and water mixture for added sweetness and moisture (optional).

Notes

For a nutty twist, add chopped nuts to the filling. For a fruit variation, replace chocolate filling with fruit preserves.
