Chicken Rice Soup

A warm and cozy Chicken Rice Soup perfect for chilly evenings and nourishing comfort.

Ingredients

  • Bone-in chicken thighs or breasts (or leftover rotisserie chicken)
  • Short-grain white rice or jasmine rice
  • 2 carrots, sliced or diced
  • 2 celery stalks, chopped
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 46 cups chicken or vegetable broth
  • Fresh thyme or parsley
  • Salt & pepper, to taste

Instructions

  1. Gather your ingredients—chop those carrots and celery, dice the onion, and mince the garlic.
  2. Sauté the diced onion in a large pot over medium heat for 3-4 minutes until translucent, then add minced garlic and sauté for another minute.
  3. Add the chopped carrots and celery, stirring occasionally for about 5-6 minutes.
  4. Nestle the chicken pieces into the pot, then pour in enough broth to cover everything and bring to a gentle boil.
  5. Lower the heat and allow the soup to simmer for 20-25 minutes.
  6. Remove the chicken once cooked, stir in the rice, and let it cook for another 10-15 minutes.
  7. Shred the chicken into bite-sized pieces and add it back to the pot along with salt and herbs.
  8. Taste your broth, adjust seasoning, and serve warm with fresh herbs.

Notes

Serve garnished with freshly chopped herbs and a squeeze of lemon for brightness. Pairs well with crusty bread or crackers.
