Homemade Chicken Noodle Soup

A comforting classic that brings warmth and joy to any table.

Ingredients

  • Bone-in chicken thighs or boneless chicken breasts
  • 8 cups chicken broth
  • 2 cups egg noodles
  • 2 medium carrots, sliced thin
  • 2 celery stalks, chopped
  • 1 onion, chopped
  • Salt and pepper, to taste
  • Olive oil, for cooking
  • Fresh herbs (parsley or dill), optional

Instructions

  1. Prepare the Chicken: Season the chicken with salt and pepper. In a large pot, heat olive oil over medium heat, add chicken skin side down, and sear for 5-7 minutes until golden brown.
  2. Sauté the Veggies: Remove chicken and sauté onions, carrots, and celery for about 5 minutes until softened.
  3. Add the Broth: Pour in chicken broth, scraping any bits from the bottom, and return the chicken to the pot.
  4. Simmer Away: Bring to a simmer, then reduce heat and cook for about 30 minutes.
  5. Shred the Chicken: Remove chicken, shred it, and return it to the pot with any accumulated juices.
  6. Cook the Noodles: Add egg noodles and cook for another 8-10 minutes until tender.
  7. Taste and Adjust: Adjust seasoning with salt, pepper, or lemon juice as needed.

Notes

You can freeze leftovers for up to 3 months. For a vegetarian version, use vegetable broth and add more vegetables.
