Creamy Chicken Gnocchi Skillet

A comforting dish filled with juicy chicken, tender gnocchi, vibrant spinach, and a luxuriously creamy sauce, perfect for any night of the week.

  • 2 pieces Chicken Breasts, boneless and skinless
  • 1 package Gnocchi (about 16 oz)
  • 4 cups Fresh Spinach
  • 1 cup Heavy Cream
  • 3 cloves Garlic, minced
  • ½ cup Parmesan Cheese, grated
  • 2 tablespoons Olive Oil
  • Salt and Pepper, to taste
  • Red Pepper Flakes, optional

Instructions

  1. Prepare the chicken: Season chicken breasts with salt and pepper, rub with olive oil, and cook in a skillet over medium heat for 6-7 minutes per side until golden brown. Remove and set aside.
  2. Cook the gnocchi: Bring salted water to a boil, add gnocchi, and cook until they float (2-3 minutes). Alternatively, add raw gnocchi directly to the skillet with the cream.
  3. Create the creamy sauce: In the skillet, add garlic and sauté for 30 seconds. Pour in heavy cream while scraping up bits from the pan.
  4. Add spinach and cheese: Allow spinach to wilt, then stir in Parmesan until melted.
  5. Combine everything: Cut cooked chicken into bite-sized pieces, return to skillet, and add drained gnocchi. Stir until coated.
  6. Final seasoning: Taste the sauce and adjust seasoning with salt, pepper, and red pepper flakes.

Notes

Serve garnished with fresh parsley or additional Parmesan. A side of crusty bread complements the dish well.
