Cozy Chicken Corn Chowder

A warm and comforting Chicken Corn Chowder that’s perfect for chilly days and brings a hug to your table.

  • 2 cups fresh or frozen corn
  • 2 medium potatoes, diced
  • 1 cup cream
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 2 tablespoons butter
  • Salt and pepper to taste
  • Optional garnish: chopped parsley or green onions

Instructions

  1. Sauté the aromatics: Melt the butter over medium heat. Add the diced onions, cooking until they’re soft and translucent, about 5 minutes. Stir in the minced garlic, cooking for another minute until fragrant.
  2. Add the potatoes: Toss in the diced potatoes and stir to coat them in the buttery goodness. Sauté for another 5 minutes.
  3. Pour in the broth: Gradually pour in the chicken broth, bringing it to a gentle boil. Reduce the heat to a simmer, cover, and let it bubble away for about 10 minutes, or until the potatoes are tender.
  4. Incorporate the chicken and corn: Stir in the shredded chicken and corn. Cook for an additional 5 minutes.
  5. Whisk in the cream: Pour in the cream, stirring well to combine. Simmer for a few minutes; taste and season with salt and pepper as desired.
  6. Final touches: Before serving, consider garnishing with chopped parsley or green onions.
