Chewy Pumpkin Cookies

Delightful soft and chewy pumpkin cookies that celebrate the flavors of fall.

  • 1 cup sugar
  • 1/2 cup brown sugar
  • 1/2 cup butter, softened
  • 1 egg
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon ginger
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Mix the wet ingredients: In a large bowl, combine butter, pumpkin puree, sugar, brown sugar, egg, and vanilla extract.
  3. Whisk the dry ingredients: In another bowl, mix together flour, baking soda, baking powder, spices, and salt.
  4. Combine the two mixtures gradually and mix until just combined.
  5. Scoop the dough onto a lined baking sheet, leaving space between each cookie.
  6. Bake for 10-12 minutes or until edges are golden.
  7. Cool the cookies on a wire rack after letting them sit for 5 minutes on the baking sheet.

Notes

For extra flavor, consider adding chocolate chips or nuts to the dough.
