Chewy Chocolate Oatmeal Bars

Delightful and chewy chocolate oatmeal bars that are easy to make and perfect for snacking.

  • 1 cup Peanut Butter
  • 2/3 cup Honey
  • 1/2 cup Coconut Oil
  • 2 cups Oats (not instant)
  • 1 1/4 cups Mini Chocolate Chips
  • 3/4 cup Dried Cranberries

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Mix the peanut butter, honey, and melted coconut oil in a large bowl.
  3. Add the oats and mini chocolate chips, and mix until combined.
  4. Add the dried cranberries and fold them into the mixture.
  5. Prepare an 8×8 inch baking dish with parchment paper and lightly grease it.
  6. Spread the mixture in the dish and press down firmly.
  7. Bake for 20-25 minutes until the edges are golden brown.
  8. Cool the bars in the pan for 10 minutes before transferring to a wire rack to cool completely.
  9. Cut the cooled bars into squares or rectangles.

Notes

These bars can be enjoyed warm or cold, and can be served with ice cream or drizzled with melted chocolate.
