A delightful twist on a classic meatloaf, this Cheesy Loaded Meatloaf Casserole combines savory ground beef with fluffy mashed potatoes and gooey cheese for a comforting meal.

  • 1 lb ground beef
  • 1/2 cup breadcrumbs
  • 1 large egg
  • 1/4 cup milk
  • 1/4 cup finely chopped onion
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp Worcestershire sauce
  • 1/2 cup ketchup (divided)
  • 2 cups prepared mashed potatoes
  • 1 cup shredded cheddar cheese
  • 4 slices cooked bacon, crumbled
  • 2 tbsp chopped green onions or chives (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the ground beef, breadcrumbs, egg, milk, chopped onion, garlic powder, salt, black pepper, Worcestershire sauce, and half of the ketchup in a large mixing bowl.
  3. Transfer the meat mixture to a greased baking dish and shape it into an even layer.
  4. Spoon the remaining ketchup over the top of the meat mixture.
  5. Spread the prepared mashed potatoes over the ketchup layer.
  6. Sprinkle the shredded cheddar cheese evenly over the mashed potatoes.
  7. Top with the crumbled bacon.
  8. Bake in the preheated oven for about 45 minutes, until the cheese is bubbling and the meatloaf is cooked through.
  9. Let it cool for about 10 minutes before serving.
