Cheesy Ground Beef and Rice Casserole

A cozy and comforting casserole that combines lean ground beef, rice, and creamy cheese for a delicious meal.

  • 1 lb lean ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 cups cooked white rice
  • 1 can (10.5 oz) cream of mushroom soup (or cream of chicken)
  • 1/2 cup milk or beef broth
  • 2 cups shredded cheddar cheese (divided)
  • 1 tsp paprika
  • Salt and pepper to taste
  • Optional: chopped parsley for garnish

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cook the ground beef in a large skillet over medium heat, breaking it up as it cooks.
  3. Add the diced onion and sauté until the beef is fully cooked and the onion is translucent, about 5-7 minutes.
  4. Toss in the minced garlic and sauté for an additional minute.
  5. Remove the skillet from heat and stir in the cooked rice, cream of mushroom soup, milk (or broth), 1 cup of cheddar cheese, paprika, salt, and pepper.
  6. Transfer the mixture to a greased 9×13-inch casserole dish.
  7. Sprinkle the remaining cup of cheddar cheese over the top.
  8. Bake for 25-30 minutes, until the cheese is bubbly and golden brown.
  9. Let the casserole rest for 5-10 minutes before serving, garnished with parsley if desired.

Notes

You can make this casserole ahead of time and store it in the refrigerator before baking.
