Caramel Mousse

A decadent and velvety Caramel Mousse that is simple to make and perfect for any occasion.

Ingredients

Scale
  • 1 cup heavy cream
  • 1/2 cup white chocolate, chopped
  • 1/2 cup caramel sauce
  • 1 tablespoon gelatin powder
  • 2 tablespoons water
  • 1/4 cup sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Bloom the gelatin: In a small bowl, sprinkle the gelatin powder over the water and let it sit for about 5 minutes.
  2. Melt the chocolate: In a heatproof bowl, melt the chopped white chocolate over a pot of simmering water, stirring occasionally.
  3. Add in the caramel: Once the chocolate is melted, pour in the caramel sauce and stir until combined.
  4. Incorporate the gelatin: Heat the bloomed gelatin in the microwave for about 10 seconds until it’s liquid and then stir into the chocolate-caramel mixture.
  5. Whip the heavy cream: In a large bowl, whip the heavy cream until soft peaks form.
  6. Combine mixtures: Gently fold a third of the whipped cream into the chocolate-caramel mixture, then fold in the rest until no streaks remain.
  7. Chill: Divide the mousse into serving glasses, cover with plastic wrap, and chill in the fridge for at least 4 hours or overnight.

Notes

For added flavor, experiment with flavored caramel or mix in crushed toasted nuts for a delightful crunch.
