  • Bone-in, skin-on chicken (or rotisserie chicken)
  • Classic egg noodles (or rice/zucchini noodles for gluten-free)
  • 23 fresh carrots
  • 23 celery stalks
  • 1 yellow onion
  • 23 cloves garlic
  • 6 cups chicken broth
  • Fresh thyme and parsley (or dried)
  • Salt & pepper to taste

Instructions

  1. Prep your ingredients: Start by gathering all your ingredients. Chop the chicken into bite-sized pieces, dice the onions, and slice the carrots and celery.
  2. Sauté the aromatics: In a large pot, heat a drizzle of olive oil over medium heat. Add diced onions and sauté for 2-3 minutes until they’re translucent. Add minced garlic and cook for another minute.
  3. Cook the chicken: Add the chicken pieces to the pot and stir, cooking until they’re lightly browned on all sides for about 5-6 minutes.
  4. Add veggies: Toss in the carrots and celery, and cook for an additional 5 minutes.
  5. Pour in the broth: Carefully add the chicken broth to the pot. Stir in your herbs—fresh thyme and a pinch of salt and pepper.
  6. Simmer away: Bring the soup to a gentle boil, then reduce the heat and let it simmer for about 20 minutes.
  7. Noodle time!: Add your noodles and cook according to package instructions (about 6-8 minutes).
  8. Taste and adjust: As the noodles cook, taste your soup and adjust seasoning as necessary.
  9. Final touches: Once the noodles are cooked, stir in fresh parsley before serving.
  10. Serve: Ladle the soup into bowls, topping with parsley or sour cream if desired.
