Berry French Toast Casserole Bake

  • 1 loaf of bread (cubed)
  • 4 large eggs
  • 2 cups milk
  • 1 cup mixed berries (strawberries, blueberries, raspberries)
  • 1/4 cup sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • Butter for greasing
  • Powdered sugar for serving (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prep the bread by cutting it into bite-sized cubes.
  3. Make the custard mixture by whisking together the eggs, milk, sugar, vanilla extract, and cinnamon.
  4. Combine the bread and custard by pouring the custard mixture over the cubed bread and folding gently.
  5. Add the mixed berries, being careful not to crush them.
  6. Grease a 9×13-inch baking dish with butter or cooking spray.
  7. Transfer the mixture to the greased dish, spreading it evenly.
  8. Bake for 30-35 minutes, until the top is golden brown.
  9. Let it cool for about 10 minutes before serving.
  10. Plate and serve warm, topped with powdered sugar and/or syrup if desired.

Notes

This recipe can be made ahead of time by assembling the night before and refrigerating overnight.
