Blueberry Lavender Vegan Madeleines

  • 1 cup all-purpose flour
  • ½ cup almond flour
  • ½ cup granulated sugar or coconut sugar
  • 2 tablespoons culinary lavender (dried)
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • ¾ cup almond milk (or plant-based milk of your choice)
  • ¼ cup melted coconut oil (or any neutral oil)
  • 1 teaspoon vanilla extract
  • 1 cup fresh or frozen blueberries

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare your madeleine pan by greasing it lightly with coconut oil and dusting with flour.
  3. Mix the dry ingredients: whisk together the all-purpose flour, almond flour, sugar, lavender, baking powder, and salt.
  4. Combine the wet ingredients in another bowl: almond milk, melted coconut oil, and vanilla extract.
  5. Pour the wet mixture into the dry ingredients, mixing gently until just combined.
  6. Fold in the blueberries carefully to avoid crushing them.
  7. Fill the madeleine molds about three-quarters full and bake for 10-12 minutes until golden brown.
