Sweet Potato Bread

A cozy and nostalgic sweet potato bread recipe that is easy to make and perfect for breakfast or a delightful snack.

  • 1 cup sweet potato puree
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 eggs
  • 1/4 cup vegetable oil
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1 pinch salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a loaf pan with butter or non-stick spray.
  3. Whisk together the flour, baking powder, cinnamon, and salt in a large bowl.
  4. Whisk the sweet potato puree, granulated sugar, brown sugar, and eggs in a separate bowl until smooth.
  5. Pour the wet ingredients into the dry mixture and fold gently.
  6. Drizzle in the vegetable oil and fold until just combined.
  7. Transfer the batter into the prepared loaf pan.
  8. Bake for 50-60 minutes until golden brown and a toothpick comes out clean.
  9. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
