  • 1 ½ cups fresh or frozen strawberries, hulled
  • ¼ cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch mixed with 1 tablespoon water
  • 1 ½ cups graham cracker crumbs
  • ⅓ cup granulated sugar
  • ½ cup unsalted butter, melted
  • 24 ounces (3 blocks) cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup sour cream
  • ¼ cup heavy cream

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. Cook the strawberries: In a medium saucepan, combine the strawberries, sugar, and lemon juice over medium heat. Stir occasionally for about 5-7 minutes.

  4. Mix together graham cracker crumbs, granulated sugar, and melted butter in a bowl.
  5. Press the mixture into a 9-inch springform pan firmly onto the bottom.
  6. Bake the crust in the preheated oven for about 10 minutes, then let it cool.
  7. Beat the softened cream cheese with sugar until smooth, about 2-3 minutes.
  8. Add eggs one at a time, ensuring fully incorporated.
  9. Stir in vanilla extract, sour cream, and heavy cream until smooth.
  10. Pour half of the cheesecake filling into the crust, drizzle strawberry sauce, then swirl.
  11. Add remaining filling and repeat the swirl with strawberry sauce.
  12. Bake for 55-70 minutes until edges are set with a jiggle in the center.
  13. Cool at room temperature for an hour, then refrigerate for at least 4 hours or overnight.
