Olive Herb Bread

  • 2 cups Bread Flour
  • 1/2 cup Pitted Green Olives
  • 1 tablespoon Fresh Rosemary
  • 1 tablespoon Fresh Thyme
  • 1 teaspoon Salt
  • 1 packet (2 1/4 teaspoons) Active Dry Yeast
  • 3/4 cup Warm Water (110°F)
  • 1 tablespoon Olive Oil

Instructions

  1. Activate the yeast: Combine warm water and yeast in a small bowl. Let it sit for about 5-10 minutes until frothy.
  2. Mix the dry ingredients: In a large bowl, combine the bread flour, salt, rosemary, and thyme.
  3. Combine the mixtures: Pour the yeast mixture into the dry ingredients along with olive oil. Mix until a rough dough forms.
  4. Incorporate the olives: Fold in the pitted green olives until evenly distributed.
  5. Knead the dough: Turn it out onto a floured surface and knead for 8-10 minutes until smooth and elastic.
  6. Let it rise: Place the dough in a greased bowl, cover, and let it rise in a warm spot for about 1 hour or until doubled in size.
  7. Shape the loaf: Punch down the dough and turn it onto a floured surface. Shape into a loaf and place in a greased pan.
  8. Final rise: Cover and let it rise for another 30-45 minutes while preheating the oven to 375°F (190°C).
  9. Bake the bread: Bake for about 30-35 minutes until golden brown and sounds hollow when tapped.
  10. Slice and enjoy: Cool slightly before slicing and serve with butter or cheese.

Notes

This recipe can be varied with added ingredients like cheese, nuts, or different herbs. Freezing is an option, just wrap tightly in plastic wrap.
