Fluffy Cottage Cheese Blueberry Cloud Bread

A delightfully airy bread made with cottage cheese and blueberries, perfect for breakfast or a sweet snack.

  • 3 large eggs, separated
  • 3 tablespoons cottage cheese
  • 1 tablespoon granulated sugar
  • 1/4 teaspoon cream of tartar
  • 1/2 cup fresh blueberries
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Separate the egg whites from the yolks into two separate bowls.
  3. Beat the egg whites with cream of tartar until soft peaks form.
  4. Mix the egg yolks with cottage cheese, sugar, and vanilla extract until smooth.
  5. Combine the egg whites gently with the yolk mixture.
  6. Add the fresh blueberries, folding them in without crushing.
  7. Prepare a baking sheet lined with parchment paper.
  8. Scoop the batter in mounds onto the baking sheet.
  9. Bake for 15-20 minutes until golden brown and puffed up.
  10. Cool for a few minutes before serving warm.

Notes

Can be served with a drizzle of honey or Greek yogurt. Variations include adding cinnamon, lemon zest, or using chocolate chips instead of blueberries.
