Avalanche Cookies are a delightful blend of creamy peanut butter, crunchy Rice Krispies, fluffy marshmallows, and mini chocolate chips, creating a no-bake dessert that’s perfect for any occasion.

  • 16 ounces white melting chocolate
  • ¾ cup creamy peanut butter
  • 2 cups Rice Krispies cereal
  • 2 cups miniature marshmallows
  • 1 cup mini chocolate chips (divided)

Instructions

  1. Melt the chocolate in a microwave-safe bowl in 30-second intervals, stirring until smooth.
  2. Mix in the peanut butter until fully combined.
  3. Add the Rice Krispies, folding them gently into the chocolate mixture.
  4. Incorporate the miniature marshmallows, stirring carefully to keep them intact.
  5. Mix in ¾ cup of the mini chocolate chips, reserving ¼ cup for topping.
  6. Shape the cookies by dropping spoonfuls onto a parchment-lined baking sheet.
  7. Top each cookie with the reserved chocolate chips.
  8. Chill in the fridge for about 30 minutes to set.

Notes

For a dairy-free option, use dairy-free chocolate. You can also experiment with nuts or different types of marshmallows for added variety.
