Cinnamon Raisin Bread

A warm and comforting cinnamon raisin bread, perfect for breakfast or a snack, with sweet raisins and aromatic cinnamon.

  • 3 cups bread flour
  • 1 packet (2 1/4 tsp) active dry yeast
  • 1 cup warm water
  • 1/4 cup granulated sugar
  • 1 tsp salt
  • 2 tsp cinnamon
  • 1 cup raisins
  • 1 tbsp vegetable oil (for greasing)

Instructions

  1. Activate the yeast: In a small bowl, mix the warm water with sugar and sprinkle the yeast over the top. Let this sit for about 5-10 minutes until it becomes bubbly and frothy.
  2. Combine the dry ingredients: In a large mixing bowl, combine the bread flour, cinnamon, and salt. Give it a good whisk to distribute everything evenly.
  3. Mix the dough: Once the yeast is frothy, pour it into the dry ingredients. Mix until a rough dough forms.
  4. Knead the dough: Scrape the dough onto a lightly floured work surface. Knead it for about 8-10 minutes until it’s smooth and elastic.
  5. Incorporate the raisins: Once the dough is kneaded, gently fold in the raisins.
  6. First rise: Place the dough in a greased bowl and cover it with a damp kitchen towel. Let it rise in a warm place for about an hour.
  7. Shape the loaf: Once risen, punch down the dough to release the air. Shape it into a loaf.
  8. Second rise: Place your loaf in a greased bread pan. Cover it again with the towel and let it rise for another 30-45 minutes.
  9. Preheat the oven: While it’s rising, preheat your oven to 350°F (175°C).
  10. Bake the bread: Bake for about 30-35 minutes, or until the top is golden brown.
  11. Cool and enjoy: Let it cool in the pan for about 10 minutes before transferring to a wire rack.

Notes

Enjoy warm with butter or honey. Can also be toasted with cream cheese or jam.
