  • 1 lb Beef Strips (sirloin, ribeye, or flank steak)
  • 8 oz Button Mushrooms (or cremini, shiitake)
  • 1 cup Sour Cream (or Greek yogurt)
  • 8 oz Egg Noodles (or zucchini noodles for gluten-free)
  • 2 cups Beef Broth
  • 2 tbsp Flour (optional)
  • 2 tbsp Olive Oil
  • Salt and Pepper to taste
  • Fresh parsley or chives for garnish

Instructions

  1. Prep your ingredients by slicing beef and mushrooms.
  2. Sear the beef in a skillet over medium-high heat for 2-3 minutes until browned; set aside.
  3. Cook mushrooms in the same skillet until golden brown, about 5-7 minutes.
  4. Create the sauce by adding flour, then gradually stir in beef broth and sour cream until smooth.
  5. Return the beef to the skillet, simmer for about 5 minutes.
  6. Cook the egg noodles as per package instructions in salted water.
  7. Combine noodles with the beef and sauce, toss gently to coat.

Notes

For variations, try adding spinach, a splash of tomato puree, or smoked paprika. Make it vegetarian by substituting mushrooms or lentils for beef.
