  • 100g feta cheese
  • 1 cup cherry tomatoes
  • 2 cups fresh spinach
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Herbs (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Prep a baking dish with olive oil.
  3. Pour in the cherry tomatoes and spread them out.
  4. Add the fresh spinach to the dish.
  5. Crumble the feta cheese over the tomatoes and spinach.
  6. Create wells in the mixture and crack an egg into each.
  7. Season with salt, pepper, and optional herbs.
  8. Bake for 20-25 minutes until the egg whites are set.
  9. Serve hot with crusty bread or pita.
