Instructions

  1. Preheat your oven: Start by preheating your oven to 350°F (175°C).
  2. Mix the dry ingredients: In a medium bowl, whisk together the all-purpose flour, baking soda, salt, and pumpkin spice blend.
  3. Cream the butter and sugars: In a large mixing bowl, beat the softened unsalted butter, brown sugar, and granulated sugar until fluffy.
  4. Add in the egg and pumpkin puree: Next, beat in the egg, pumpkin puree, and vanilla extract until smooth.
  5. Combine wet and dry: Gradually mix in the dry ingredient mixture until it’s just combined.
  6. Scoop the dough: Using a cookie scoop or spoons, drop rounded tablespoons of the dough onto a baking sheet lined with parchment paper.
  7. Bake: Place the baking sheet in the oven and bake for 10-12 minutes, or until the edges are lightly golden.
  8. Cool: Once done, remove the baking sheet from the oven and let the cookies cool.
  9. Make the frosting: In a mixing bowl, beat together the softened cream cheese, butter, and sifted powdered sugar until it’s smooth and creamy.
  10. Frost the cookies: Once the cookies are cooled, spread a generous dollop of cream cheese frosting on each one.
