Pumpkin French Toast

A cozy and flavorful breakfast treat capturing the essence of fall with pumpkin, spices, and warm maple syrup.

  • 1/4 cup regular or non-dairy yogurt
  • 1 cup unsweetened oat or almond milk
  • 1 tsp vanilla
  • 1 1/2 tsp pumpkin pie spice
  • 2 tbsp maple syrup (optional)
  • 1 loaf regular or gluten-free bread (about 16 slices)
  • Regular or vegan butter for frying
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp ginger
  • 1/8 tsp cloves
  • Cinnamon, powdered sugar, and maple syrup for serving

Instructions

  1. Whisk together the pumpkin purée, yogurt, oat or almond milk, vanilla extract, and maple syrup in a medium mixing bowl until smooth and creamy.
  2. Add the pumpkin pie spices, cinnamon, nutmeg, ginger, and cloves. Whisk again until fully incorporated.
  3. Prep the bread by slicing it into 1-inch thick pieces.
  4. Dip the bread slices into the pumpkin mixture, allowing each side to soak for about 10-15 seconds.
  5. Cook the soaked slices in a heated skillet for 3-4 minutes on each side until golden brown.
  6. Keep the French toast warm in a preheated oven while cooking the remaining slices.
  7. Serve hot with toppings like powdered sugar, maple syrup, or fresh fruit.
