Apple Cider Cheesecake

A fall-inspired cheesecake that combines creamy cheesecake with the bright flavor of fresh apple cider.

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1 cup sugar
  • 3 (8 ounce) packages cream cheese, softened
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup reduced fresh apple cider
  • 1 tablespoon all-purpose flour

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a medium bowl, combine graham cracker crumbs and melted butter.
  3. Press the mixture into a 9-inch springform pan and bake for 10 minutes.
  4. Beat the cream cheese in a large mixing bowl until smooth, about 2 minutes.
  5. Add the sugar and vanilla extract, mixing until combined.
  6. Incorporate the eggs one at a time, mixing on low speed.
  7. Pour in the reduced apple cider and mix until blended.
  8. Fold in the flour until just combined.
  9. Bake in a water bath for 60 minutes or until edges are set.
  10. Cool in the oven with the door cracked for 1 hour, then refrigerate for at least 4 hours.
  11. Serve with a drizzle of caramel sauce or whipped cream.

Notes

For variations, try adding caramel pecans, a maple cinnamon swirl, or making it vegan.
