Apple Cider Cookies

Soft, chewy cookies bursting with apple and spice flavors, perfect for fall.

  • 1 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1/4 cup apple cider
  • 1 tsp vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp salt
  • 1 cup diced apples
  • 1/2 cup powdered sugar (for glaze)
  • 12 tbsp apple cider (for glaze)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cream the butter, brown sugar, and granulated sugar together until light and fluffy.
  3. Add the egg, apple cider, and vanilla extract; mix until smooth.
  4. Mix the flour, baking soda, cinnamon, nutmeg, and salt in a separate bowl.
  5. Combine the dry mixture with the wet ingredients, stirring until just combined.
  6. Fold in the diced apples gently.
  7. Scoop tablespoons of dough onto a lined baking sheet.
  8. Bake for 12–15 minutes until lightly golden.
  9. Cool on the baking sheet for 5 minutes, then glaze with a mixture of powdered sugar and apple cider.

Notes

These cookies freeze well! Shape dough into balls and freeze before baking.
