  • 5 oz arugula
  • 1/4 cup red onion (sliced thin)
  • 1/2 cup figs (chopped)
  • 1/2 cup goat cheese crumbles
  • 1 cup pecan halves
  • 2 Tbsp maple syrup
  • Pinch of sea salt
  • 1/2 cup olive oil
  • 2 tsp maple syrup (for dressing)
  • 1 tsp lemon juice
  • 1 1/2 tsp Dijon mustard
  • 1/2 tsp pepper
  • 1 garlic clove (minced)
  • 3 Tbsp balsamic vinegar
  • 1/41/2 tsp sea salt (or to taste)

Instructions

  1. Prep Your Ingredients: Start by gathering and washing all your ingredients.
  2. Toast the Pecans: Heat a dry skillet over medium heat.
  3. Add the pecan halves and toast them for about 3-5 minutes until fragrant.
  4. Prepare the Dressing: In a small bowl, whisk together your olive oil, Dijon mustard, maple syrup, lemon juice, minced garlic, balsamic vinegar, and a pinch of sea salt and pepper.
  5. Assemble the Salad: In a large bowl, combine the arugula, thinly sliced apples, red onion, chopped figs, and goat cheese.
  6. Add the Dressing: Drizzle your dressing over the salad and toss gently.
  7. Top with Pecans: Sprinkle the toasted pecans on top.
  8. Serve: Dish up your salad on a large platter or individual bowls.

Notes

For a vegan option, omit the goat cheese and try avocado slices or tofu feta instead. To keep apples from browning, sprinkle with lemon juice after slicing.
