Crunchy Zucchini Fritters: High Protein, Low Carb & Air Fryer Delight

Delicious zucchini fritters that are crispy, flavorful, and packed with protein, perfect as an appetizer or light meal.

  • 2 medium zucchini (about 400g, grated)
  • 1 tsp salt
  • 2 large eggs
  • 1/3 cup chickpea flour
  • 2 tbsp grated Parmesan
  • 2 cloves garlic, minced
  • 1/4 tsp black pepper
  • 1/2 tsp onion powder
  • 1 tbsp fresh parsley, chopped
  • Olive oil spray

Instructions

  1. Prepare the zucchini: Begin by grating the zucchini using a box grater or food processor. Place the grated zucchini into a clean kitchen towel or cheesecloth, sprinkle with salt, and let it sit for about 10 minutes.
  2. Squeeze out excess moisture: After 10 minutes, wring out the grated zucchini to remove as much moisture as you can.
  3. Mix the batter: In a large mixing bowl, combine the drained zucchini, eggs, chickpea flour, grated Parmesan, minced garlic, black pepper, onion powder, and chopped parsley. Stir until everything is well combined.
  4. Preheat the air fryer: Before you start forming fritters, preheat your air fryer to around 375°F (190°C).
  5. Shape the fritters: Spoon a heaping tablespoon of the batter into your hand and gently form a fritter, about ½ inch thick.
  6. Air fry the fritters: Lightly spray the air fryer basket with olive oil spray. Place the fritters in a single layer and give them a light spritz of olive oil spray on top.
  7. Cook to perfection: Air fry them for about 10-12 minutes, flipping halfway through.
  8. Cool and serve: Once cooked, remove the fritters and let them cool slightly on a wire rack.

Notes

Serve with homemade tzatziki or a simple garlic yogurt sauce for dipping. Fritters can be stored in an airtight container for up to 3 days.
